Photo Week #31
I had a productive week last week. Lately I’ve started to physically write down my weekly goals, which sometimes are ambitious and most of the times are not. Forcing myself to verbalize what I want to accomplish has helped encourage me towards action. I’ve been listening to the “Daily Wellness” playlist on Spotify on most days – it’s a lot of self-care BS for the most part, but there were some podcast segments about setting intentions and goals and giving oneself the space to also not achieve those goals that has stuck with me.
I faced my fears of deep frying and dead yeast this weekend as part of our Greek feast – I fried falafel (made from a box mix, haha) and made pita breads that were 90% successful – no browning, but a fillable pocket!
I also made that shakshuka couscous and eggs in my cast iron that I have never used (taken from one of Jeremiah’s old roommate) and I am now more encouraged to use it. It’s just so heavy and unwieldy, you know? Chefs are constantly singing the praises of the cast iron skillet but… most days I’m still going to reach for that lightweight nonstick skillet. Whatever.
